Blueberry Protein Pancake Breakfast ‘Cake’ Monique Volz | Ambitious Kitchen Ingredients: Nonstick cooking spray 2 medium ripe bananas, mashed 2 large eggs, at room temperature ½ cup plain whole milk Greek yogurt ¼ cup whole milk or 2% milk ¼ cup pure maple syrup, plus extra for drizzling on top 2 tsp vanilla extract 2 cups protein pancake mix (such as Kodiak Power Cakes Flapjack and Waffle Mix) ¼ cup melted salted butter 1½ cups fresh blueberries Directions: Yield: 10 to 12 servings Preheat the oven to 350°F.
